I was planning to make homemade ricotta but I ran out of time. I think the key to making this herb cheese better than I could (and, mine was fine) was your making your own ricotta. My store-bought ricotta had no moisture, a TBS at the most, and is just, well different. I also would add more garlic and more herbs. But, the spread/mix/salad dressing is sensational and I just need to tweak it a bit, especially since I have all those herbs, fresh, at at hand. Homemade ricotta, for sure. And, your meal that accompanied it........perfection. Something I will use as a model in the next few weeks. Just wonderful, gorgeous and I know it had to be delicious. What a Blog Post.
