Burrata Pugliese, I would have to order and I'm reluctant to mail order soft cheese in the summer. To find Orechiette con Grano Arso might require some sleuthing. A quick search on the Internet didn't come up with anything easily available. (A trip to Puglia was suggested or befriend Mario Batali.) Still this was a cuisine education and a very interesting and delicious, I think, result. I admire your creativity in pulling these menus together.
