Have you seen "Queen of the Sun", a documentary about the scarcity of bees. It is alarming. Has won all kinds of awards. I liked this salad. Wish I ate beets more often but I do usually have a packet of the little pre-cooked beets, vacuum wrapped, in the fridge which I throw in salads.
