For some crazy reason, I now have 5 lbs. of Demerara sugar, more than I will need in my lifetime, I suspect. Anyway, this looks like a delicious "traybake" (have never heard that expression). I will have to substitute the red currents for another berry but like the ingredients in this. Will go with blueberries as you suggest. I like your photo with the messy parchment paper showing. Hopefully you will do something clever with the "gentleman lion ". Obviously your daughters are as creative in their thinking as your are.
