French Fridays with Dorie - Celebration Week #3: ”The Play-It-Again-Dorie Recipe“


After having cooked our way through Dorie Greenspan´s cookbook "Around my French Table" for the last four years, seven months, and twenty-one days, our third celebratory post for French Fridays with Dorie is entitled ”The Play-It-Again-Dorie Recipe“ – meaning that we were asked to choose the recipe from the book that we „have made the most often"  or that we "have made a variation of the most".

Although I love to keep making many recipes from the book, there are actually two recipes that I have made the most from Dorie´s book. There is the family-favorite „Chicken, Apples, and Cream à la Normande“ (pages 218-9) that we made back in December 2012. And everybody´s favorite, the Corn Pancakes (page 337) that we made back in June of 2012.




Dorie´s Corn Pancakes are fabulous on their own, or as an accompaniment to roast chicken, pork cutlets, and steaks. But they are equally good in summer with a lovely tangy Cherry Bell Radish Dip or fancied up with lime crème fraîche, fresh salmon tartare and salmon roe.




Who would have thought that a recipe with but four ingredients (corn, flour, eggs, and milk) would prove to be the most requested recipe at our house – I suspect that kids just love the inherent sweetness from the corn and I love the convenience of being able to use a cupboard staple, canned corn, and be able to have a recipe that I can easily adapt to what we feel in the mood for.

I often add chives to the batter and I have translated this recipe many times for friends and, particularly for the children´s classmates who are just crazy about them. I have made them for school lunches and picnics, in summer and in winter and for Food Revolution Day as well.

Corn Pancakes are always a success and always such terrific recipe to have in the back of your mind. No matter what your cooking skills. And no matter what you fancy the day you are making these. Give this recipe a try and you will agree, I am sure.

  1. I think that photo with the salmon tartare and salmon roe is fabulous, and a perfect choice. There are so many good
    recipes to select, and difficult to make the choice.

    I've enjoyed reading the Dorie wrap-ups over various blogs. It's a wonderful cookbook, and how fun to have made all the recipes.

    1. Beth, absolutely, oftentimes less is more - so true of these basic corn pancakes. But sometimes we are in the mood to fancy them up with salmon tartare and salmon roe and some decadent lime crème fraîche.

  16. Oh, Andrea, I commented yesterday and a little fairy ate my comment (Was it Imken?). I am so happy you reminded me of these Corn Cakes which I remember loving. I'm a girl from Iowa, what's not to love about corn. As a kid, I ate lots of canned corn. Of course, I never think of the many things that can be done with this little cake so was happy to read your many suggestions. I think my problem has been that I was so busy making new recipes each week that I never returned to re-make many recipes. Not enough mouths to feed around my house. Very nice post with lovely photos, as usual.

Mary, dear, oh those corn pancakes - yep, the kids love them and their friends love them and their families too...a recipe that I had no choice but to make again and again and share and translate and share some more - who would have thought? Not me, when I made them for the first time, that´s for sure! And, yes, I am grateful for all those hungry taste testers that happily seem to enjoy all those things I wip up.

  17. The easy ones seem to be shining through this week. Makes sense that the ones we turn to again and again are the easiest to squeeze into busy schedules. Love seeing all your creative ideas for those pancakes, they really are quite versatile.

    I spent my free weekend suffering from a nasty summer cold. Seems fully unfair to be sick when the weather is so beautiful, but I'm starting to feel better and looking forward to spending more time outside next weekend.

  18. The way you describe these corn pancakes just make me want to try them...I am a big fan of corn, therefore I know I will love them...it is so nice that you use this pancakes as a base of such an elegant dish such as the tuna tartare...beautifully done my dear!

    1. Juliana, thank you very much - you know that I adore these simple, easy recipe with but a few ingredients that anyone can make and can remember. But sometimes it is also good to give them a bit of a fancy treatment like adding some beautiful salmon tartare and the works - either way, they are delicious and will stay in my repertoire of go-to recipes from Dorie´s book.

  21. I love all of the different ways you dressed up the corn pancakes. So creative! I need to revisit those this fall, once corn is out of season here. In the summer I love making fresh corn pancakes. They are a family favorite.
