French Fridays with Dorie - Lime Honey Beet Salad




Today's recipe for the French Fridays with Dorie group is "Lime Honey Beet Salad". A simple recipe with few, albeit somewhat exotic, ingredients - well, limes, honey, chives and dill are not that exotic but in connection with beets, they are.




With the summer holidays approaching (though we still have four weeks to go), the bi-annual school festival was held at the school of one of my sons. The students, parents and teachers had organized all kinds of activities including the usual bake sale, visit to the school's zoo, mystery dungeon, etc. The school is one of only a small number of boys' schools left in this country and the school owns a few beehives and sells the honey twice a year at the summer and winter school festivals.




I bought a few glasses of the honey produced from the spring - and  early summer yield and added two tablespoons of that wonderful honey to the Lime Honey Beet Salad. I love the idea that the school produces its own wonderful honey and I do try to use it as often as I can.




We enjoyed the beet salad, but I guess we are not the most impartial of taste testers because we eat a lot of beets in this country and we just love them in classical as well as more exotic dishes. The only minor adjustment I made to the recipe was adding walnut oil instead of olive oil because we like the taste of the walnuts together with the earthy taste of the red beets. I would have loved to use beets of different colors, but I have never ever seen yellow beets being grown around here.

    attention. I think that is a great idea pairing walnut oil with root veggies, sound intriguing. Wonderful photos, especially the close up. Have a

  2. I so agree, walnuts and beets are such a classic pairing. I didn't use my walnut oil, but afterwards I was thinking that I really should have.

    We enjoyed this recipe as well and I definitely see it making a repeat appearance in my kitchen.

  3. I love walnuts with beets. My usual beet salad pairs those with a mustardy vinaigrette. I think this worked with the exotic (with beets) ingredients. It was a refreshing salad. How cool that your son's school has their own beehives. I wish I had my own honey to use for this recipe, but the bees aren't quite there yet. Have a great weekend!

How wonderful that your son's school has their own beehives and you were able to use some for the salad. i have some walnut oil and will have to try that the next time I make this salad which will be very soon.   5. We keep bees I though we haven't gotten much honey from them yet, so wonderful that your son's school keeps bees too. I'm sure your salad must have tasted wonderful with such special honey.

  9. I have been putting off getting any oils outside of canola, veg, and olive oil... but i'm thinking I need to give walnut oil a fair try... you have me convinced! :)

  16. I think that eating honey that is made locally is the most healthy and nutritious, Andrea. Have you seen "Queen of the Sun", a documentary about the scarcity of bees. It is alarming. Has won all kinds of awards. I liked this salad. Wish I ate beets more often but I do usually have a packet of the little pre-cooked beets, vacuum wrapped, in the fridge which I throw in salads. Not as good as homemade, that's for sure.
