Tuesdays with Dorie - Mocha Chocolate Chip Cookies


Today´s recipe for the Tuesdays with Dorie group is for Mocha Chocolate Chip Cookies. The recipe for these fabulous cookies was contributed by baker Rick Katz.




The ingredients for these cookies are plain flour, instant coffee powder (I like to use freshly ground coffee instead)…




…baking soda, some salt, unsalted butter, granulated sugar and dark brown sugar, eggs, vanilla (I like to use homemade vanilla sugar), chocolate chunks (I used only dark chocolate with 70 % cocoa solids), and coarsely chopped dried apricots – although apricots are an optional ingredient in this recipe, I decided to add the dried fruits because I found very nice, sweet and plump, dried organic apricots at my favorite health food store.




The combination of granulated and dark brown sugar is a common one, the former adding crunch, the latter a caramel flavor. And the addition of bicarbonate of soda is the most common raising agent in chocolate chip cookies. Overall, a nice and easy recipe.




Of course, you should go for good quality dark chocolate too – the more cocoa there is in it, the more cocoa butter content you will have and the uneven chunks created by chopping your own chocolate gives a better result than even chocolate chips.




These are the ultimate comfort cookies, they are crisp on the outside, chewy and soft on the inside and the addition of dried apricots is quite nice, the dried fruit adds a nice flavor and texture to these cookies. And they are really simple to make with ingredients that, maybe except for the dried fruits, you usually have in your pantry.

  1. I'm glad you liked these too. I had no idea you could just grind regular coffee instead of buying instant. Thanks for the tip! I'll definitely try that next time.

    1. Jora, using ground coffee is just what I like but some peolple definitely prefer coffee powder. If I do use coffee powder, I always make sure to use a good quality Italian one in order to get that mocha taste.

  2. Just lovely - and your cookies have some thickness to them - how nice. I have always thought to use fresh ground coffee. I'm sure this gave them more of a mocha flavor than the espresso did for me. Still these were quite tasty and I really liked the addition of the apricots. I adore your coffee grinder!

    1. Cathleen, thanks so much - I love these vintage wooden coffee mills so much and since this is a recipe that calls for coffee, be it instant or freshly ground, today seemed like a good day to use it as a prop.

  5. Such tasty looking cookies and such a fun coffee grinder! I've not yet found time to bake this recipe, but I will. And it's fun to look through the posts to see what I should expect. Most spread a bit too much and there are other issues, but yours look perfect. Your cookies are some of the best I've seen.

  6. Oh, You just brought me down memory lane, Andrea, when I used to visit my grand-grand-aunt and grind her coffee with the wooden coffee grinder.

    I loved this easy and delicious cookie recipe. I made some changes and additions (you know me by now) and we all adored them: a winner!

    1. Kathy, thanks, cooffe is always a question of personal preference but we love the taste in baked goods and it was quite harmonious with the dark chocoalte and the dried apricots.

    1. Paula, yes, the chopped dried apricots were nice in these cookies, I would definitely also add them in the future - the difference in "appearance" of these cookies may be the result of the brand new, state of the arf convection oven (not mine, unfortunately) that I used when I baked these.
