Today marks the first day of Advent, so to start off this very special time of year, I baked these lovely Italian cookies called Biscotti. Traditionally they were made with hazelnuts and aniseed only but today, they are flavored with a wide variety of nuts, dried fruits, chocolate, lemon or orange rind. They are hard and crunchy because they are twice-cooked (‘bis’ is Italian for twice and ‘cotti’ for cooked). This makes them ideal for dipping into dessert wine or coffee, especially espresso. Recipes for Biscotti date back as far as the 13th century in Italy. Since the flavor of these twice-baked cookies deepens over time, you can make them in advance and store them for a few weeks in cookie tins that you should keep in a cool and dry place.

Zum ersten Advent gibt es heute diese knusprigen italienischen Kekse auch Biscotti genannt. Sie wurden traditionell nur mit Haselnüssen und Anis hergestellt, aber in neueren Rezepten werden Biscotti mit einer Vielzahl von Nüssen, getrockneten Früchten, Schokolade, Zitronen- oder Orangenabrieb gebacken. Sie sind so knusprig, weil sie zweimal gebacken sind ("Bis" ist Italienisch für doppelt und "Cotti" für gekocht). Das macht sie ideal für das Eintauchen in Dessertwein oder Kaffee, vor allem Espresso. Rezepte für Biscotti gab es schon im 13. Jahrhundert in Italien. Da der Geschmack dieser zweimal gebacken-Kekse bei sachgerechter Lagerung in Keksdosen noch intensiver wird, kann man sie gut auf Vorrat backen und für ein paar Wochen an einem kühlen und trockenen Ort aufbewahren. |
Biscotti are oblong-shaped almond cookies or biscuits. They are dry and crunchy because after having been baked into loaves, the loaves are then cut into slices while still hot and fresh from the oven. And then baked a second time
For this recipe, I wanted to add a festive touch and substituted the usual spices with a homemade Gingerbread Spice Mix (Lebkuchengewürzmischung). These Biscotti smell wonderful while baking and are the perfect treat at this time of year as they are not overly sweet and do not contain a lot of butter. They are studded with delicious and healthy almonds and have a delicate Christmassy flavor that pairs very well with an espresso or cup of coffee, tea or hot chocolate. |
Biscotti sind längliche Mandelkekse, die dadurch so trocken und knusprig werden, weil man sie zunächst in Strängen backt, dann noch warm in Scheiben schneidet und dann ein zweites Mal backt. Für dieses Rezept wollte ich gerne eine etwas festliche Note und habe deshalb die üblichen Gewürze mit einer selbstgemachten Lebkuchen-Gewürzmischung ersetzt. Diese Biscotti riechen beim Backen wunderbar und passen unglaublich gut zur Adventszeit. Sie nicht allzu süß und enthalten auch nur sehr wenig Butter. Sie sind voller leckerer und gesunder Mandeln und schmecken durch die Gewürze wunderbar nach Lebkuchen. Sie passen unglaublich gut zu einer Tasse Espresso, Kaffee, Tee oder heißer Schokolade. |

When the Biscotti have completely cooled, place them in cookie tins with well fitting lids. If you store the cookie tins in a cool and dry place, they will keep well for a few weeks.

NOTE: you will end up with about 3 1/3 tbsp Gingerbread Spice Mix, so you can use it also for baking delicious Gingerbread or other recipes that call for Gingerbread spices.
Gingerbread Spice Mix is called for in many German recipes. Similar to some spice mixes in the US, like Apple Pie Spice or Pumpkin Pie Spice, or the so-called Mixed Spices, a British blend of sweet spices, the Gingerbread Spice Mix is a combination of baking spices that are very familiar and that can be easily found in stores or online.

I love the idea of gingerbread flavor in anything, especially biscotti. What a great treat with coffee, wish we could trink Kaffee and eat Lebkuchen Biscotti together, Andrea!

If the spices are not fresh or the best quality, they just do not have the "punch" that I am looking for! You are absolutely right as far the Christmas markets are concerned - if the spices are good there, it is easy to leave all your money at the spice merchant´s stall!

ReplyDeleteLiebe Wally, Backrausch ist ein schönes und passendes Wort - das gilt glaube ich auch für mich...das Gute an diesem Rezept ist, dass die Biscotti einfach zu backen sind und man kann sie gut und gerne einige Wochen im Vorraus herstellen. Und man kann natürlich auch eine gute, fertige Lebkuchengewürzmischung dafür nehmen!

o.k., 3 x 1kg und 4 x 750 gr Stollen, da habe ich vor 20 Jahren ein tolles Rezept bekommen, inzwischen ist es etwas modifiziert, wie die anderen Rezepte ebenfalls.... Jedes Familienmitglied besteht auf ganz bestimmte Plaetzchen zur Weihnachtszeit. So gibt es ein Standardrepertoire, Braune Krapfen (Schokoruehrteig mit ganz vielen geroesteten Mandelsplittern) und Walnusherzchen, beide Rezepte stammen aus einer E&T aus dem Jahre 1982 (ups, also schon 31 Jahre alt :-) ), natuerlich Spritzgebaeck und Vanillekipferl, Haselnusssterne mit Ahornsirup (eigenes Rezept), Linzer Spitzbuben mit Himbeermarmelade (Himbeeren aus dem Garten), Springerle, das habe ich bis heute geschafft nebst der ganzen Weihnachtsdeko, - Honiglebkuchen, kleine Florentiner und Saure- Sahne- Brezeln (wenig süß) werden noch in dieser Woche gebacken. Eventuell gibt es in diesem Jahr auch wieder ein Knusperhaus, mal sehen... Ich mag es, wenn der Plaetzchenteller eine huebsche und unterschiedliche Auswahl bietet. Manchmal kommt eine neue Sorte hinzu, einfach um zu testen, wie es bei den Lieben ankommt. Ich wuerde manchmal gerne etwas anderes ausprobieren... So werden es in diesem Jahr deine Biscotti sein...
DeleteWally, da kann ich nur sagen, du stellst mich und meine Weihnachtsbäckerei komplett in den Schatten - so viele wunderbare Sachen schaffe ich dieses Jahr nicht - aber ich finde es toll, dass du dir die Zeit genommen genommen hast, so ausführlich zu antworten, Hört sich alles so wunderbar lecker an und das mit dem bunten Teller finde ich auch, "the more the merrier!".

Colette, believe me when I say "do not fear these..." personally, I believe that Biscotti are some of the easiest cookies ever - all that you need is a really good recipe, like this one, of course, and watch them while baking, so they do not turn to crisps. That´s it!

ReplyDeleteMary, but I did use anise seed - it is part of the nine spices in my Gingerbread Spice Mix - I am aware that Kathy is quite the resident expert at making Biscotti but these are quite delicious too. I have been baking Biscotti for what seem like an eternity and we love them with espresso best!
